I'd like to add additional parallax banners (background_top.jpg) to my interior category pages. Is this possible? and if so how do I specify which banner files go with each category menu item?

HI,
in theory for all module positions you can use parallax effect.
also it's possible for almost whole background. But of course it looks better on modules only.
You have 2 options:
1) Use css code
2) use ready parallax module
