Menu/Category pages configuration problems

Problems configuring menus:

I have nested categories & menus eg:
Animals
-|Dogs
-|Cats
-|Horses
for both categories & menus
the problem is: The 'top' level menu Animals should show all sub-categories (I've checked this in the menu config AND category):

BUT it only displays the 1st Category (Dogs) but not those below.

I can't figure a solution, tried every combination, changed/checked front end/changed again... but no luck so I'm posting here
