How do I disable mootools-more and other JS and font stuff?

I am setting up a simple site light on bells and whistles. I notice that with Boutique and some of the other 2.5 themes there is a lot of Javascript and some font stuff that is enabled by default and it's unclear how to disable. Disabling what is not needed will help significantly in page load speed. Here are the bits to disable:

I assume that if I uninstall K2 that the K2 CSS will go away.

Part 2 of this question: If I do need to enable any of these functions but only on a particular page, how do I do that?

Please look at our template settings, we've prepared special option to achieve this. You can disable mootools on some pages by giving menu ItemID or 'option' like com_k2. Our wiki gives you more details about it >> wiki.gavick.com

This helps quite a bit. I took one of the templates, I think blackandwhite, disabled all modules, and it was still at around 500KB. It was pretty plain, yet heavy. Once I got into the template settings and started turning off things I was able to get the template (checked via ySlow) to around 100KB. What an incredible improvement in page load speed. Plan B will be to re-enable necessary modules/plugins/template stuff as needed. i.e. building from the ground up.
