The order confirmation email template is horrible. Does anyone know where/how to modify it?

i think i know what you are looking for.
Please go to ROOT/components/com_virtuemart/views/invoice/tmpl and have a look at invoice_items.php.
There you can adjust your email template.

Don't forget to make an override to ensure you keep your modifications after an virteumart update.
