Categories not listed.

The original widget "Blog Categories" do not list the categories of my blog (over 15 categories)
It only list the "demo" categories (web-design and wallpaper)

Why?

We don't modify any default widget, like "blog categories", so I don't think it's a theme issue.
You can send me a PM with backend access to your website and I'll check it exactly.

Regarding your second answer, you would receive answer faster wihout bumping your posts, if someone answer (i.e. you again) the thread is moved to the end of current queue.

You've used wrong widget.
Custom Menu with title Blog categories (it's a menu).
You should use "Categorie" widget, I've added it to your sidebar.
