If I enter and update a product of virtuemart gives the following error:

Because you have display_errors set to on which is not recommended. You might also have your Joomla set to display errors. Turn it off and all Notices should disappear.

So it looks like a general Joomla problem. Please check if your server meets Joomla recommendations.

The server is ok, I have other domains hosted with joomla 2.5 and joomla 3 and also to work well

The problems shows with our theme disabled - so it is general Joomla / Configuration / Hosting issue. I would suggest to ask the question on default Joomla forum.
