What you mean by "your fonts"? In template you can use several particular font types like Google Fonts, Squirrel Fonts and Adobe web fonts but that's all - there is no support for any other font resources.

I want to disable google fonts for Headers - font
and prescribe their via @ font face
Which file do I need to register the new fonts and forcibly disconnecting old for Headers - font

To disable Google fonts please just go to template settings, open Fonts tab and remove all selectors. Then you need to make custom changes to include your font in layouts/header.php and add own CSS rules in override.css file.

No, no in this field where HTML selectors are provided like H1, H2, H3, etc please just leave empty field.
