Sorry... Editor cock up John.... corrupted modules

Sorry,
Looks like I have made a 'rooky' error. I have set up a 'John' based site and then looked to replace some of the demo content by my own in the 'Custom HTML' modules, as I had in previous sites.
This seems to have messed up settings and changed stuff and I cannot go back...
2 questions...
1. How do I go back to get individual modules reloaded correctly?
2. Is there a tutorial as to how I actually amend the individual modules to use my own suitably prepared content rather than the blank photos and holding articles etc?

Or have I misunderstood the other posts on the subject where it seems several other users have apparently made the same mistake?
