Subcategories listed alphabetically

Is there a way to change the subcategories to be listed as they are in my menu structure, and not alphabetically? All of my items are within subcategories, so clicking a category will present a page with a 3 column listing all of the subcategories.

Also, is there a way to change this to be a 4 column layout? I'm having trouble finding which file to modify in order to do this.

Can You please show me on Your site what categories You have in mind? Is in VM, joomla articles, K2 or some 3rd party extension's subcategories ?
