Can I switch/change a template? i.e. now I have start up template; can I install/upload the writer template (gk_writer - zip) and just switch it, or I'm going to face an issue?

You will need to set up template and modules if you would like to have same look as demo server. Beside that, our templates are just simple templates and can be switched on/off/changed.
