Different portfolio pages

I would like to have one portfolio page for each cathegory.

I just can see to select overlay, polaroid or portfolio style in page settings, but not how to select a cathegory.

Category you can select in the Theme Customizer settings (Appearance -> Customize). Got to your portfolio/polaroid page and in the cusotmizer, please check the frontpage settings section, here you can add category "slug" and find some other options connected with the portfolio/polaroid pages.

I think I did not explain well. I have it on http://beta.paumorales.com. There are different categories and I want to show a polaroid style portfolio page for each category, as it appears on the menu.

Now all menu items show the same category specified on "category slug".

It's not possible.
Portfolio or polaroid are page templates, so can't be visible on your categories, but you can add new Page called "jazz" with template i.e. polaroid, set category slug "jazz", then you can add another page "altres" with the same polaroid template and category slug "altres", then you can assing these pages in your menu items.
It's only way, because these page templates are created for the frontpage generally.

That is what I am trying, but when I change Category slug on a page (on the costumizer), it changes on all the pages.

Yes, unfortunately it's not possible, you can use portfolio template with one category and polaroid with another, but can't use the same template page with different categories slug.
