When it will be ready. You will see official notice on FB or Blog.
Right now you can remove our "old" override for VM 2.x and use VM 3.x with his default theme.

*In this moment, i have Joomla 3, (shop & buy) + virtuemart 3, but: Working in progress... It's possible the Full Compatibility?

Probably in January will be available update for this template, which add support for VM3.

So we still support this template in J3 version.
also for J2.5 if you stuck :

So the way is to migrate joomla and virtuemart from 2.5 to 3 and then install the new template?
The configuration of the Template will be the same as in the 2.5 version?
Or is it necessary to uninstall the 2.5 template first?

To be honest migration VM may be a way of pain or in most cases can be... I'm not talking about template but component itself.
about general migration please read:

Before migration disable all GK plugin - they can crash your back-end.
Remember after Joomla migration re-install : all GK plugins and modules and then template
