I'm updating the theme, but need to do it that google PageSpeed insights is asking me.
Eliminate JavaScript and CSS rendering blocking.
where I can enter a code to delay the loading of JavaScript and how would this code?

I guess its not that simple, you would need to move some things from templates/gk_simplicity/layouts/blocks/head.php
to
templates/gk_simplicity/layouts/blocks/footer.php
because those are files that adds css and js
to
templates/gk_simplicity/layouts/blocks/footer.php
