Changing the text fonts

Hey, I'm from germany so unforuntaelly a can't write "ä,ü,ö, or ß" I always have to write ae,oe,ue and son on, where can I change de fonts fo the headlines or the menu, I even tried it in the backend but as I changed it to !"Times New Roman" nothing diesnt matter par example.,...
